  1. In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Add the egg yolks and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  3. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  4. Roll out the dough on a lightly floured surface to about 1/8 inch thickness. Cut out circles using a round cookie cutter.
  5. Place a spoonful of apricot preserves in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges to seal.
  6. Place the empanaditas on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  7. Allow the empanaditas to cool for 10 minutes before dusting with powdered sugar. Serve and enjoy!
