Preheat the oven to 325°F (163°C).

In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.

In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.

Stir in flour and cinnamon. Fold in chopped apples and pecans.

Pour the mixture into the prepared crust.

Bake for 55-60 minutes or until the center is set.

Turn off the oven and leave the cheesecake inside for 1 hour.

Remove from the oven and let it cool completely.

Refrigerate for at least 2 hours or overnight.

Serve chilled with whipped cream on top.
