  1. Preheat the oven to 325°F (165°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the creamed mixture, mixing well. Fold in the candied fruit, nuts, and raisins. If desired, stir in brandy or rum.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the cake cool in the pan for 10 minutes. Then, transfer to a wire rack and let it cool completely.
  8. Once cooled, wrap the fruitcake in plastic wrap and let it rest at room temperature for at least 2 hours or overnight before serving.
