Preheat the oven to 350°F (180°C). In a mixing bowl, cream together the peanut butter, unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, and mix well. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until well combined. Roll the dough into small balls and place them onto a baking sheet lined with parchment paper. Using a fork, make a crisscross pattern on each cookie. Bake for about 10 minutes, or until the edges are slightly golden. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
