In a food processor, grind the pistachios until finely chopped.

In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract. Mix until smooth.

Fold in the whipped cream and ground pistachios.

In a separate bowl, mix the graham cracker crumbs and melted butter.

Press the graham cracker mixture into the bottom of serving glasses.

Spoon the pistachio cream mixture on top of the graham cracker crust.

Refrigerate for at least 2 hours.
