Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, mix together the mashed banana, crushed pineapple, chopped pecans, vegetable oil, sourdough starter, egg, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
