In a mixing bowl, cream together the butter and caster sugar until light and fluffy.

Sift in the plain flour and rice flour, then mix until a dough forms.

Roll out the dough on a lightly floured surface to a thickness of about 1cm.

Cut the dough into petticoat tail shapes or any desired shape.

Place the shortbread on a baking tray lined with parchment paper.

Bake in the preheated oven for 15-20 minutes, or until golden brown.

Remove from the oven and let the shortbread cool on a wire rack for 30 minutes.
