  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the whole wheat flour, oat flour, baking powder, salt, and cinnamon.
  3. In a separate bowl, mix together the coconut oil, honey, egg, almond milk, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the blueberries and chopped nuts, if desired.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
