Peel and chop the potatoes, carrots, and onion into bite-sized pieces.

Trim the Brussels sprouts and cut them in half.

In a large pot, boil the potatoes, carrots, and Brussels sprouts until slightly tender, about 5 minutes. Drain and set aside.
