Stormy Sunset
The vibrant colors of the sweet potatoes, bell peppers, and cherry tomatoes resemble a stormy sunset, hence the name of the dish.

Preheat the oven to 200°C (400°F).

Peel and cut the sweet potatoes into wedges.

Slice the red bell peppers and red onions.

In a large bowl, toss the sweet potatoes, bell peppers, red onions, cherry tomatoes, olive oil, balsamic vinegar, minced garlic cloves, fresh rosemary, salt, and black pepper.

Spread the mixture onto a baking sheet and roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized.

Remove from the oven and let it rest for 10 minutes.
