Wild Rice With Mushrooms
Wild rice is not actually rice, but a type of aquatic grass seed.

Rinse the wild rice and drain.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic. Cook until onion is translucent.

Add mushrooms and cook until they release their moisture.

Add wild rice, thyme, salt, and black pepper. Stir well.

Add vegetable broth and bring to a boil.

Reduce heat, cover, and simmer for 25-30 minutes or until rice is tender.

Remove from heat and let it rest for 5 minutes.
