  1. In a large bowl, combine the whole wheat flour, all-purpose flour, and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Gradually add cold water, 1 tablespoon at a time, tossing with a fork until the dough forms a ball.
  3. Divide the dough in half. On a lightly floured surface, roll out each portion into a 12x8-inch rectangle.
  4. Cut each rectangle into 8 smaller rectangles.
  5. Spoon 1 tablespoon of strawberry jam onto the center of 8 rectangles. Top with the remaining rectangles and press the edges to seal.
  6. Place the pop tarts on a baking sheet lined with parchment paper.
  7. Bake at 375°F (190°C) for 20-25 minutes or until golden brown.
  8. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
  9. Drizzle the glaze over the warm pop tarts.
  10. Allow to cool for 10 minutes before serving.
