In a large bowl, combine the whole wheat flour, all-purpose flour, and salt. Cut in the butter until the mixture resembles coarse crumbs.

Gradually add cold water, 1 tablespoon at a time, tossing with a fork until the dough forms a ball.

Divide the dough in half. On a lightly floured surface, roll out each portion into a 12x8-inch rectangle.

Cut each rectangle into 8 smaller rectangles.

Spoon 1 tablespoon of strawberry jam onto the center of 8 rectangles. Top with the remaining rectangles and press the edges to seal.

Place the pop tarts on a baking sheet lined with parchment paper.

Bake at 375°F (190°C) for 20-25 minutes or until golden brown.

In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.

Drizzle the glaze over the warm pop tarts.
