  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the pumpkin puree, pumpkin pie spice, and vanilla extract, and mix until well combined.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Place the melted chocolate chips in a piping bag or zip-top bag and cut a small hole in the corner. Pipe a spiral design on top of the cream cheese mixture.
  7. Use a toothpick or skewer to drag lines from the center of the cheesecake to the edges, creating a spider web pattern.
  8. Bake for 55-60 minutes, or until the center is set.
  9. Turn off the oven and leave the cheesecake inside for 1 hour.
  10. Remove from the oven and let it cool completely.
  11. Refrigerate for at least 2 hours, or overnight, before serving.
  12. Just before serving, pipe whipped cream onto the edges of the cheesecake and use the black gel food coloring to draw spider legs on top of the whipped cream.
