  2. Heat vegetable oil in a large pan over medium heat. Add chopped onion and cook until golden brown.
  3. Add minced garlic and grated ginger to the pan and cook for another minute.
  4. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt to the pan. Stir well.
  5. Add chopped tomatoes and cook until they release their juices.
  6. Add sliced okra to the pan and cook for 5 minutes.
  7. Drain the soaked rice and add it to the pan. Stir well to coat the rice with the tomato and okra mixture.
  8. Add water and bring the mixture to a boil. Reduce the heat, cover the pan, and simmer for 15-20 minutes or until the rice is cooked.
  9. Remove the pan from heat and let it rest for 5 minutes.
  10. Fluff the rice with a fork and garnish with chopped cilantro.
  11. Serve hot and enjoy!
