Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the whole-wheat flour, all-purpose flour, baking powder, ground ginger, and salt.
  3. Cut the unsalted butter into small pieces and add it to the flour mixture. Use your fingers or a pastry cutter to cut the butter into the flour until it resembles coarse crumbs.
  4. In a separate bowl, whisk together the honey, milk, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the crystalized ginger.
  6. Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Pat the dough into a circle about 1 inch (5 cm) thick.
  7. Use a sharp knife or a biscuit cutter to cut the dough into 8 wedges or rounds.
  8. Place the scones on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.
  9. Remove from the oven and let the scones cool on a wire rack before serving.
