Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, mix together the peanut butter, sugar, milk, vegetable oil, egg, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and stir until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about halfway.

Dollop a teaspoon of jam onto the center of each muffin.

Top with more batter to cover the jam.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
