Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a bowl, whisk together the flour and salt.

In a separate bowl, cream together the butter and sugar until light and fluffy. Add the egg yolks and vanilla extract, and mix well. Gradually add the flour mixture and mix until just combined.

Roll the dough into 1-inch balls and place them on the prepared baking sheet. Use your thumb or the back of a spoon to make an indentation in the center of each ball.

Bake for 10 minutes, then remove from the oven. Use the back of a spoon to gently press down the indentations again. Fill each indentation with raspberry jam, then sprinkle white chocolate over the top.

Return the cookies to the oven and bake for an additional 2 minutes, or until the edges are lightly golden.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes. Transfer to a wire rack to cool completely before serving.
