  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter for the crust. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add sour cream and vanilla extract, and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition. Pour the filling mixture over the crust in the springform pan.
  5. Place the springform pan on a baking sheet and bake for 60 minutes, or until the edges are set and the center is slightly jiggly.
  6. Turn off the oven and leave the cheesecake inside for 1 hour.
  7. Remove the cheesecake from the oven and let it cool completely. Refrigerate for at least 2 hours, or overnight.
  8. In a saucepan, combine stout beer, sugar, butter, heavy cream, salt, and vanilla extract for the stout caramel. Cook over medium heat, stirring constantly, until the mixture thickens and turns into a caramel sauce.
  9. Let the caramel sauce cool slightly before drizzling it over the chilled cheesecake.
