Swedish Ginger Cookies, also known as ‘pepparkakor’, are a traditional Swedish Christmas treat often enjoyed with a cup of glögg, a hot spiced wine.

In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Add the molasses and egg, and mix well.

In a separate bowl, whisk together the flour, ginger, cinnamon, cloves, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Cover the dough and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll the dough into 1-inch balls and place them on the prepared baking sheet.

Flatten each ball slightly with the bottom of a glass.

Bake for 8-10 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
