White-Chocolate Cherry Shortbread

In a medium bowl, whisk together the all-purpose flour, cornstarch, and salt.

In a separate large bowl, cream together the unsalted butter and powdered sugar until light and fluffy.

Add the vanilla extract to the butter mixture and mix until well combined.

Gradually add the dry ingredients to the butter mixture and mix until a dough forms.

Fold in the white chocolate chips and dried cherries.

Shape the dough into a log, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.

Slice the chilled dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
