In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.

In a separate bowl, combine the all-purpose flour, quick oats, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the pumpkin puree, chocolate chips, and chopped walnuts.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes or until the edges are golden brown. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
