  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.
  4. Stir in the melted white chocolate chips and crushed candy canes. Pour the mixture over the crust in the springform pan.
  5. Bake for 60 minutes or until the center is set.
  6. Remove from the oven and let it cool in the pan for 10 minutes.
  7. Run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the pan.
  8. Refrigerate for at least 4 hours or overnight.
  9. Serve chilled with whipped cream and sprinkle with additional crushed candy canes, if desired.
