Watercress Vichyssoise

Peel and dice the potatoes. Trim and slice the leeks.

Melt the butter in a large pot over medium heat. Add the leeks and cook until softened.

Add the potatoes and vegetable stock to the pot. Bring to a boil and simmer until the potatoes are tender.

Stir in the watercress and cook for an additional 2 minutes.

Use an immersion blender to puree the soup until smooth.

Stir in the heavy cream and season with salt and black pepper.

Refrigerate for at least 30 minutes to allow the flavors to develop.

Serve chilled and garnish with additional watercress leaves, if desired.
