Preheat the oven to 350°F (175°C).

Cut the sourdough bread into cubes and spread them on a baking sheet. Toast in the oven for about 10 minutes or until crispy.

In a large skillet, melt the butter over medium heat. Add the diced onion, celery, and minced garlic. Cook until the vegetables are softened.

Add the sliced mushrooms, thyme, rosemary, salt, and black pepper to the skillet. Cook until the mushrooms are tender and any liquid has evaporated.

In a large mixing bowl, combine the toasted sourdough cubes and the mushroom mixture. Stir in the vegetable broth until the bread is evenly moistened.

Transfer the mixture to a greased baking dish and cover with foil.

Bake for 30 minutes, then remove the foil and bake for an additional 10 minutes or until the top is golden brown.
