The Victoria Sandwich, also known as the Victoria Sponge, is named after Queen Victoria of the United Kingdom. It became popular during her reign in the 19th century and is traditionally served at afternoon tea.

  1. Preheat the oven to 180°C (350°F). Grease and line two 20cm (8-inch) round cake tins.
  2. In a mixing bowl, beat the butter and caster sugar together until light and fluffy.
  3. Gradually add the eggs, beating well after each addition.
  4. Sift in the self-raising flour and baking powder, then fold gently into the mixture.
  5. Stir in the milk to create a smooth batter.
  6. Divide the batter equally between the prepared cake tins and smooth the tops.
  7. Bake in the preheated oven for 20 minutes or until golden brown and springy to the touch.
  8. Remove from the oven and allow to cool in the tins for 5 minutes.
  9. Transfer the cakes to a wire rack to cool completely.
  10. Once cooled, spread the strawberry jam over the bottom cake layer.
  11. Place the second cake layer on top and dust with powdered sugar.
  12. Serve and enjoy!
