Vichyssoise
Vichyssoise is a classic French soup that is traditionally served cold. It was created by French chef Louis Diat in the early 20th century while working at the Ritz-Carlton in New York City. He named the soup after his hometown of Vichy, France.

Peel and chop the potatoes, leeks, and onion.

In a large pot, melt the butter over medium heat. Add the chopped vegetables and cook for 5 minutes.

Add the vegetable broth, salt, and white pepper. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.

Remove from heat and let the soup cool slightly. Then, blend the soup until smooth using an immersion blender or regular blender.

Stir in the heavy cream and refrigerate for at least 2 hours, or until chilled.

Serve the vichyssoise cold, garnished with chopped chives.
