  1. Soak the red beans in water overnight.
  2. Drain and rinse the beans.
  3. In a large pot, heat some oil and sauté the onion, bell pepper, celery, and garlic until softened.
  4. Add the Cajun seasoning, thyme, and bay leaf, and cook for another minute.
  5. Add the drained beans and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the beans are tender.
  7. While the beans are simmering, cook the rice according to package instructions.
  8. Once the beans are cooked, remove the bay leaves and season with salt, black pepper, and cayenne pepper to taste.
  9. Serve the spicy red beans and rice together, garnished with chopped green onions.
