Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

Add carrot, potato, and frozen peas to the skillet. Cook for 5 minutes.

Sprinkle flour over the vegetables and stir to coat.

Slowly pour in vegetable broth and milk, stirring constantly.

Add salt, black pepper, dried thyme, and dried rosemary. Stir well.

Simmer the mixture until thickened, around 5 minutes.

Divide the vegetable filling into individual oven-safe dishes.

Roll out the pie crust and cover each dish with the crust.

Optional: Beat an egg and brush it over the crust for a golden finish.

Cut a few slits in the crust to allow steam to escape.

Bake for 30-35 minutes, or until the crust is golden brown.
