Heat vegetable oil in a large pan or wok over medium heat.

Add chopped onion and minced garlic, and cook until they become translucent.

Push the onion and garlic to one side of the pan and crack the eggs into the other side.

Scramble the eggs until fully cooked, then mix them with the onion and garlic.

Add the mixed vegetables and cook until they are tender.

Add the cooked rice and stir-fry for a few minutes until everything is well combined.

Season with soy sauce, salt, and black pepper, and stir to evenly distribute the flavors.
