Rinse the quinoa thoroughly under cold water.

In a large saucepan, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent.

Add sliced mushrooms and cook until they release their moisture.

Add rinsed quinoa to the saucepan and stir well.

Pour in vegetable broth, season with salt and black pepper.

Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

Remove from heat and let it rest for 5 minutes.

Fluff the quinoa with a fork and garnish with chopped parsley.
