Heat sesame oil in a large skillet over medium heat.

Add garlic and ginger, sauté for 1 minute.

Add mixed vegetables and cashews, cook for 5-7 minutes until vegetables are tender.

Stir in soy sauce, salt, and black pepper. Cook for another 2 minutes.
