Cherry Almond Scones
Scones originated in Scotland and are traditionally served with clotted cream and jam.

Preheat the oven to 425°F (220°C).

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Cut the cold butter into small cubes and add it to the dry ingredients. Use your fingers or a pastry cutter to cut the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together the milk and almond extract.

Make a well in the center of the dry ingredients and pour in the milk mixture. Stir until just combined.

Gently fold in the cherries.

Transfer the dough onto a floured surface and knead it a few times until it comes together.

Shape the dough into a circle about 1-inch (5 cm) thick. Cut the circle into 8 wedges.

Place the wedges onto a baking sheet lined with parchment paper.

Bake for 15-18 minutes, or until the scones are golden brown.

Allow the scones to cool on a wire rack for at least 10 minutes before serving.
