Preheat the oven to 325°F (163°C).

In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large mixing bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition. Stir in the scraped vanilla bean seeds.

Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.

Bake for 60 minutes or until the center is set and the top is lightly browned.

Remove from the oven and let it cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake.

Allow the cheesecake to cool completely in the pan on a wire rack. Then, refrigerate for at least 2 hours or overnight.

Before serving, remove the sides of the springform pan. Top the cheesecake with fresh berries and drizzle with honey.
