  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them several times with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-60 minutes, or until tender.
  4. Remove the potatoes from the oven and let them cool for 10 minutes.
  5. Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin shell.
  6. In a bowl, mash the potato flesh with sour cream, butter, salt, and black pepper.
  7. Stir in grated cheddar cheese and chopped green onions.
  8. Spoon the mixture back into the potato shells.
  9. Place the stuffed potatoes back on the baking sheet and bake for an additional 15 minutes, or until the cheese is melted and the tops are lightly browned.
  10. Remove from the oven and sprinkle with crumbled bacon.
