In a food processor, combine the flour and salt. Add the butter and pulse until the mixture resembles coarse crumbs. Gradually add the cold water and pulse until the dough comes together.

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 400°F (200°C).

Slice the zucchini into thin rounds. In a skillet, heat the olive oil over medium heat. Add the garlic and cook until fragrant. Add the zucchini and cook until tender. Remove from heat and set aside.

In a bowl, mix together the ricotta cheese, Parmesan cheese, mozzarella cheese, egg, basil, salt, and black pepper.

On a lightly floured surface, roll out the dough into a circle. Transfer the dough to a baking sheet lined with parchment paper.

Spread the cheese mixture onto the dough, leaving a border around the edges. Arrange the cooked zucchini on top.
