  2. Cut the tops off the peppers and remove the seeds and membranes.
  3. In a large bowl, combine cooked quinoa, cheddar cheese, Monterey Jack cheese, Parmesan cheese, red onion, garlic, olive oil, salt, black pepper, and fresh parsley. Mix well.
  4. Stuff the peppers with the quinoa and cheese mixture.
  5. Place the stuffed peppers in a baking dish and cover with foil.
  6. Bake for 25 minutes.
  7. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and the peppers are tender.
  8. Let the peppers rest for 5 minutes before serving.
