  1. Blanch the spinach in boiling water for 1 minute, then drain and squeeze out excess water. Finely chop the spinach.
  2. Mash the tofu and finely chop the green onions, ginger, and garlic.
  3. In a bowl, mix the spinach, tofu, green onions, ginger, garlic, soy sauce, sesame oil, cornstarch, and salt.
  4. Place a spoonful of the filling in the center of each dumpling wrapper. Fold the wrapper in half and seal the edges.
  5. Arrange the dumplings in a steamer basket and steam for 10-12 minutes.
  6. While the dumplings are steaming, prepare the dipping sauce by combining soy sauce, rice vinegar, chili oil, and water.
  7. Serve the jade dumplings hot with the soy-sesame dipping sauce.
