Israeli couscous, also known as pearl couscous, is larger and chewier than regular couscous. It was created in Israel in the 1950s as a rice substitute.

Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened.

Add the Israeli couscous and pine nuts to the skillet, and cook for a few minutes until lightly toasted.

Stir in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for about 10-12 minutes, or until the couscous is tender.

Remove from heat and let it rest for 5 minutes. Fluff with a fork.

Stir in fresh parsley and lemon juice. Adjust seasoning if needed.
