  1. Peel and cut the potatoes into small cubes.

  5. Add the blue cheese to the saucepan and stir until melted.
  6. Season with salt and black pepper.
  7. Add the cooked potatoes to the sauce and mix well.
  8. Transfer the mixture to a baking dish.
  9. Bake for 20-25 minutes or until the top is golden brown.
  10. Garnish with parsley before serving.
