  1. Preheat the oven to 375°F (190°C).
  2. In a small saucepan, bring 1 cup of water to a boil. Remove from heat and steep the black tea bags in the hot water for 5 minutes. Remove the tea bags and set aside.
  3. In a 9-inch (23 cm) oven-safe skillet, melt the butter over medium heat. Sprinkle the sugar evenly over the melted butter and cook until the sugar starts to caramelize, about 5 minutes.
  4. Meanwhile, peel, core, and slice the apples. Toss the apple slices with lemon juice to prevent browning.
  5. Arrange the apple slices in the skillet, overlapping them slightly. Drizzle the steeped tea and vanilla extract over the apples.
  6. Roll out the puff pastry sheet to fit the skillet and place it over the apples, tucking the edges down into the skillet.
  7. Bake in the preheated oven for 30-35 minutes, or until the puff pastry is golden brown.
  8. Remove from the oven and let the tarte tatin cool in the skillet for 10 minutes.
  9. Carefully invert the tarte tatin onto a serving plate. Serve warm with whipped cream and garnish with fresh mint leaves.
