Red velvet cake is believed to have originated in the 1800s and was originally colored by a chemical reaction between cocoa and buttermilk. The vibrant red color we associate with red velvet today is achieved with the addition of food coloring.

  2. In a microwave-safe bowl, melt the butter. Add the granulated sugar, cocoa powder, red food coloring, vanilla extract, and salt. Mix well.
  3. Beat in the eggs, one at a time, until fully incorporated. Gradually add the flour and mix until just combined.
  4. In a separate bowl, mix the cream cheese, powdered sugar, and peppermint extract until smooth.
  5. Pour half of the brownie batter into the prepared baking dish. Spoon dollops of the cream cheese mixture on top. Use a knife to swirl the two batters together.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Remove from the oven and let cool for 30 minutes. Sprinkle crushed peppermint candy canes on top.
