Sweet Potato Shepherd’s Pie
Shepherd’s Pie traditionally uses lamb, but this vegetarian version substitutes the meat with flavorful vegetables and sweet potatoes for a delicious twist.

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes. Boil them until tender, then drain and mash them with olive oil.

In a large skillet, sauté the onion and garlic until translucent. Add the carrots and cook until slightly softened.

Stir in the peas, vegetable broth, tomato paste, thyme, salt, and black pepper. Simmer for a few minutes.

Transfer the vegetable mixture to a baking dish. Spread the mashed sweet potatoes over the top.

In a small bowl, mix the mashed potatoes, butter, and milk until smooth. Spread this mixture over the sweet potatoes.

Sprinkle grated cheese on top.

Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Allow it to rest for 10 minutes before serving.
