Preheat the oven to 375°F (190°C).

Slice the summer squash and onion.

Heat olive oil in a skillet over medium heat. Add the onion and garlic, and cook until softened.

In a bowl, whisk together the eggs and milk. Stir in the cooked onion and garlic mixture.

Add the sliced summer squash, cheddar cheese, breadcrumbs, salt, and black pepper to the bowl. Mix well.

Transfer the mixture to a greased casserole dish.

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown.
