  1. Peel and dice the sweet potatoes.
  2. Chop the onion and mince the garlic cloves.
  3. Heat olive oil in a large pot over medium heat.
  4. Add the onion and garlic, and cook until softened.
  5. Add the sweet potatoes and vegetable broth to the pot.
  6. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in the brandy, heavy cream, cinnamon, nutmeg, salt, and black pepper.
  9. Cook for an additional 5 minutes.
  10. Serve hot, garnished with chives.
