Sweet-Bean Piroshki

In a small bowl, dissolve yeast and sugar in warm milk. Let it sit for 5 minutes.

In a large mixing bowl, combine flour and salt. Add the yeast mixture and vegetable oil. Mix until a soft dough forms.

Knead the dough on a lightly floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour, or until doubled in size.

Punch down the dough and divide it into 8 equal portions. Roll each portion into a ball.

Flatten each dough ball and place a spoonful of sweet red bean paste in the center. Fold the dough over the filling and pinch the edges to seal.

Heat vegetable oil in a deep pan or skillet over medium heat.

Fry the piroshki in batches until golden brown, about 2-3 minutes per side.
