In a large bowl, combine the flour and sugar. Cut the butter into small cubes and add to the bowl. Use your fingers to rub the butter into the flour mixture until it resembles coarse breadcrumbs.

In a separate small bowl, whisk together the egg yolks and cold water. Add the egg mixture to the flour mixture and use a fork to mix until the dough comes together.

Turn the dough out onto a lightly floured surface and knead a few times to bring it together. Shape the dough into a disc, cover with plastic wrap, and refrigerate for 30 minutes.

Preheat the oven to 180°C (350°F). Roll out the dough on a lightly floured surface to about 1/2 cm (1/4 inch) thickness. Cut out circles or desired shapes and place them on a baking sheet lined with parchment paper.

Arrange the sliced nectarines on top of the dough circles, leaving a small border around the edges. Bake in the preheated oven for 25 minutes, or until the crust is golden brown.

Remove the tartlets from the oven and brush with apricot jam while still warm. Allow to cool for 10 minutes before dusting with powdered sugar.
