Swedish Sugar Cookies
Swedish sugar cookies, also known as ‘Sockerkakor’, are a traditional Swedish treat often enjoyed during fika, the Swedish coffee break. They are typically served with a cup of coffee or tea.

In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing until just combined.

Divide the dough into two equal portions and shape each into a log.

Wrap the logs in plastic wrap and refrigerate for at least 30 minutes.

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheet.

Sprinkle each cookie with pearl sugar.

Bake for 10-12 minutes or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
