  2. Core the apples and cut off the top to create a well.
  3. In a small bowl, mix together the butter, brown sugar, cinnamon, and vanilla extract.
  4. Fill each apple with the butter mixture.
  5. Roll out the puff pastry and cut it into 4 squares.
  6. Place each apple in the center of a puff pastry square.
  7. Fold the corners of the pastry up and around the apple, pressing to seal.
  8. Brush the pastry with beaten egg.
  9. Place the apples on a baking sheet and bake for 25 minutes or until golden brown.
