  1. Preheat the oven to 180°C.
  2. Roll out the pie crust and press it into a tart pan.
  3. Bake the crust for 10 minutes, then let it cool.
  4. In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  5. In a separate bowl, whip the whipping cream until stiff peaks form.
  6. Fold the whipped cream into the cream cheese mixture.
  7. Spread the cream cheese mixture onto the cooled crust.
  8. Arrange the fresh fruits on top of the cream cheese mixture.
  9. Heat the apricot jam in a small saucepan until melted, then brush it over the fruits.
  10. Chill the tart in the refrigerator for at least 1 hour before serving.
