Wrap in plastic wrap and refrigerate for at least 30 minutes. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. Slice the dough into 1/4-inch thick rounds and place on the prepared baking sheet. Bake for 8-10 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
